Vegetarian Vietnamese rolls with spicy sauce

Losing weight is not hard, especially if you are open to change. I made these Vietnamese rolls today and they tasted so so so goooooooooood .They were light, crunchy, refreshing, healthy, wholesome and yummy. Everything packed into bite size goodness with a sticky organic spicy peanut sauce to compliment it ……Worth giving it a try

1 Vietnamese roll kit (you can get it from any supermarket). It includes rice paper wraps and vermicelli noodles

  • Spinach, basil , Cilantro, or Mint – optional (2 leaves per roll)
  • 1 Cucumber – cut into matchsticks
  • 1 red Bell Pepper – cut into matchsticks
  • 1 cup shredded Carrots
Dipping Sauce
  • 1 tsp of Peanut sauce
  • Chilli flakes or dash of wasabi
  • Soyasauce
  • Water for consistency
  • Prepare a container with hot water for the rice paperAdd a wrap for about 310 seconds, or until pliable
  • Lay the wrap on a clean wood surface
  • Add a little of each veggie to the middle
  • Fold the sides in first
  • Roll up from the side nearest you to the other end, the rice paper will stick to itself
  • Combine the soy sauce and ginger for the dip
  • Enjoy!!!
